Pumpkin Chocolate Chip Cupcakes
Preheat the oven to 350F and Prepare muffin tin with 12 cupcake liners. ( I also spray my liners lightly with non stick cooking spray)
In a large bowl, hand mix the following:
- 1 Cup Canned Pumpkin
- 1 Cup Sugar
- 1/3 Cup Vegetable Oil
- 1/4 Cup Soy Milk
- 1 Tsp Vanilla
Sift in the following:
- 1 1/4 Cups Flour
- 1/2 Tsp Baking Soda
- 1/2 Tsp Baking Powder
- 1/2 Tsp Cinnamon
- 1/4 Tsp Salt
Hand Mix and then fold in:
- 1/2 Cup Chocolate Chips
Fill Cupcake liners 2/3 full and bake 22 min at 350F.
These are delicious plain or frost with your favorite icing after they cool. My go to frosting is:
Vegan Vanilla Buttercream Frosting
Beat together:
- 1/2 Cup Shortening
- 1/2 Cup Earth Balance
Add:
- 3 1/2 Cups Confectioners Sugar
Beat until combined
Add:
- 1 1/2 Tsp Vanilla
- 1/8 tsp Almond Extract
- 1/4 Cup Soy Milk
Beat for 5-10 min until fluffy.
